Spicy mussel soup

Preparation time: 40 min.

Ingredients for 4 portions:

2 onions

2 cloves of garlic

2 tbsps. olive oil

1 pack of mixed vegetables for soup (frozen, approx. 75g)

1 large can of tomatoes (approx. 800g)

200ml white wine
4 cans of Rügen Fisch mussels in tomato sauce, each 110g
Sugar, salt, chilli flakes

To garnish: fresh parsley

Preparation method:

Chop the onions finely. Cut the garlic into thin slices. Braise in the hot oil in a large pan until transparent. Add the vegetables and tomatoes with the juice. Simmer for 10 min., stirring now and then.

Add the wine and bring the soup to the boil. Allow to simmer for 15 min. on a low heat without a lid. Add the mussels and allow to stand for 2-3 minutes. Season the soup with a little sugar and salt and chilli flakes if desired. Serve in soup plates or bowls and sprinkle with freshly chopped parsley to taste.

Tip: Frozen soup vegetables can be obtained in handy small packs of 70 or 75g in the frozen herbs section.
