Fried herring with herbed mashed potato

Fried herring with herbed mashed potato and caramelised onions

Preparation time: 40 min.

Ingredients for 4 portions:

1kg potatoes (floury variety)

8 red onions (approx. 350g)

2 cans of Rügen Fisch fried herring, each 375g

1 bunch of parsley (or 1 pack of frozen parsley)

200ml milk

25g butter

Salt, nutmeg

1-2 tbsps. honey

Preparation method:

Peel the potatoes, wash them and cut into pieces. Put into salted water, bring to the boil and allow to cook for approx. 15 minutes.

Peel the onions and cut into quarters or eighths, depending on size. Open the cans of fried herring and pour off the marinade into a pan. Add the onions to the marinade and bring to the boil. Simmer without a lid on a low heat for 20 min.

Remove the leaves from the parsley, wash them, pat dry and chop finely. Pour the potatoes. Mash them thoroughly with a potato masher. Stir the milk, butter and parsley into the mashed potato and season with salt and a pinch of nutmeg.

Pour off most of the remaining liquid in the pan with the onions. Drizzle the onions with honey and caramelise for 1-2 minutes on a high heat. Serve the mashed potato with fried herring and caramelised onions.

Tip: Do not puree the potatoes with a hand blender as this makes the potato "slimy".
